<p style="text-align: justify;">The underlying philosophy of Antonello Colonna Vallefredda Resort revolves around food, which is the true project heart. In the Antonello Colonna’s kitchen both tradition and modernity find a perfect balance: the flavors of the past time are reinterpreted and presented in a charming creations form. You could call such a “roman, modern cuisine” or as likes to call the Chef Colonna, a &#8220;roman twist&#8221;, as the same, once ingredients are used but played on all possible variables as never before, creating chromatic aspects, packaging, geometry: wholesomeness and modernity which are reflected in the whole farm.</p>
<p style="text-align: justify;">At the Antonello Vallefredda Colonna Resort you can choose between a country inn and restaurant with gourmet dishes that will delight the palates, the most exigent. Furthermore, the original structure can offer a unique opportunity, with every place thought specifically to enjoy the meal chosen one, like a table in the restaurant or in a room by the fireplace, or outdoor chef&#8217;s table, as well as in the wellness centre or quite nearby the pool.</p>
<p style="text-align: justify;">The menu includes, among the appetizers, the pork fegatello (liver) with bay leaves, onion and chilli, eggs of duck with wild herbs, bread with butter and anchovies, caciotta (cheese) with anchovies and capers, head of pork with river crayfishes with asparagus, terrine of roast meat and royale of foie gras, pea soup with char and fried shallots. As first course you can choose from the broth with cappelletti (a special, Italian stuffed noodles) filled with tubers and roots, to tortelli (an other type of stuffed noodles) with “Fiocco della Tuscia” (cheese) and pil-pil sauce, almonds and wild chicory, as well as risotto with marrow, or eel with sprout, spaghettone (pasta) at the vine-dresser way, eggplant-ravioli (stuffed noodles) with tomato juice and basil, fettuccine “ajo e ojo” with trout, bread and pecorino (cheese). Among the main courses are listed veal with vegetables and roots, chicken with potatoes and peppers, pigeon with fennel and amaretto (liqueur), lamb served with muzzle and scannatura (a special piece of lamb) salad, cod with caramelized eggplants and cabbage, pork belly with poplar mushrooms and potatoes cooked in ashes. A rich desserts trolley concludes this special meal.</p>
<p style="text-align: justify;">In the restaurant of Antonello Colonna Resort Vallefredda also the eye will be satisfied, taking its part: the design furniture as the works of Le Corbusier, Mies van der Rohe, of Cassina and other Masters, the large full-length windows offering the Park Vallefredda views, are the perfect complement to the culinary works of art prepared by the Master cooker Adriano Baldassarre.</p>

<p><em>Rome, 4<sup>th</sup> April 2012</em> &#8211; The family history of the Colonnas is dotted with an extraordinary conjunction of dates and stories. Their journey began a long time ago in Labìco on April 7, 1874. That year saw the birth of Ditta Andrea Colonna, a <em>Trattoria</em>, a tradition that finds continuity today with the opening of the Antonello Colonna Vallefredda Resort, scheduled for April 10, 2012, exactly 138 years later.</p>
<p>Indeed it was the great-great grandfather of the famous chef Antonello Colonna who founded the “Vecchia Osteria” in Labìco, the last stop for travellers headed south towards Rome to find shelter and food. Passed down to his parents and then to him, the family establishment grew and thrived thanks to Antonello’s skilled hands, talent and sense for business. It even moved to the eternal city and then, as in a hyperbole, moved back to Labìco, with the opening of the Antonello Colonna Vallefredda Resort.</p>
<p>The Antonello Colonna Vallefredda Resort, latest creation of the volcanic chef, is a unique establishment, designed and conceived on a combination of cubic modules, whose sizes, perfectly identical, elegantly describe the perfection of number three.</p>
<p>The number is also in the conjunction of three magic dates: April 7, 1874 (establishment of Ditta Andrea Colonna – Trattoria), April 10, 2012 (opening of the Antonello Colonna Vallefredda Resort), April 11, 1956 (Antonello Colonna’s date of birth).</p>
<p>Precisely on the wake of the above dates, including his birthday, the famous chef, now a farmer chef,  opens the doors of this striking farmhouse with a Mercedes event that will see three beautiful cars on display for three consecutive days.</p>

<p style="text-align: justify;">The name of the new suite, “Dolce Vita”, is an obvious tribute to the world of cinema: the hotel, located a short walk away from Via Veneto, the cradle of Rome’s <em>dolce vita</em>, was the subtle protagonist of the love story between Ava Gardner and Walter Chiari, who often took refuge in the intimate ambience of its suite to escape the flashing cameras of the paparazzi. Today it continues to keep the secrets of Sean Connery, Roger Vadim, Federico Fellini, and its rooms could tell the stories of the many artists and filmmakers who breathed life into the capital at night during the sixties.</p>
<p style="text-align: justify;">A long hallway leads to two rooms: the Dolce Vita suite and a double room. These are separated by a passageway that guarantees guests the utmost privacy, and linked by a splendid terrace with a collection of sofas and a breathtaking panorama of Villa Ludovisi Buoncompagni.</p>
<p style="text-align: justify;">The Dolce Vita suite has a floor surface of around 80 sqm in a cleverly thought-out layout: on entering the suite, the guest immediately encounters the living and relax area, featuring a kitchenette complete with Nespresso coffee machine and an optional butler service, an elegant guest bathroom; a large central area with a luxurious table and delicate chairs in white leather that contrast strongly with the wenge wood floor; and finally the lounge area with a sophisticated sofa in shades of grey, the ideal position to occupy for the best view of the LCD &#8211; HD TV.</p>
<p style="text-align: justify;">All the furnishing accessories present were exclusively designed and created especially for the suite: the choice of the colours and materials used is the result of extensive research and careful attention to detail, that come to life in the elegant sofa made by a master craftsman from Rome, a “cousu main” especially created for this suite, the refined golden lamps and the other objects of design that adorn the setting.</p>
<p style="text-align: justify;">The living area is separated from the sleeping area by a set of large wooden sliding doors that can be closed to create two entirely independent areas: the area has been designed to suit a range of different uses and the living area can also be used to host work meetings or lunches.</p>
<p style="text-align: justify;">The sleeping area, wrapped snugly in warm tones of dove-grey, gold and grey is furnished with taste and subtlety: the pearlescent walls create delicate golden glints of natural light that match the unique headboard made of golden metal wire, and the wonderful lamp created especially for Sofitel Rome Villa Borghese; a large LCD &#8211; HD television with a DVD player and a capacious wardrobe complete the picture.</p>
<p style="text-align: justify;">The sleeping area leads conveniently into the bathroom: the atmosphere created by the pure white Carrara marble and the bathroom fittings in resin create spectacular plays of light by reflecting the sparkling crystal of the whirlpool shower and the fully glazed ceiling, which in turn creates a waterfall effect above the bath. Guests can relax in the bathtub and gaze at the stars in the Roman sky, while enjoying a generous range of bath products by Hèrmes.</p>
<p>There is a strong cinema feel to the suite. The walls play host to magical photographs by the Italian master Emanuele Scorcelletti, with shots that that tell of Italian and French luxury: Giorgio Armani makes an appearance, immortalised in a glorious image where he dresses the actress Jodie Foster; there is the charm of the beautiful Keira Knightley, photographed in the luxurious Paris apartment of the designer Coco Chanel located in 31 rue Cambon in Paris; Anita Ekberg, Martin Scorsese, Sharon Stone, Jack Nicholson, Monica Bellucci, Sean Penn and other great artists from the world of cinema complete the touch of magic that conveys the essence of the suite.</p>
